          I think the Sake Fizz is a fantastic looking drink, however it just doesn't tickle my taste buds, so I set out to create something that did but using some of my chosen flavours! It took a while to get right, but by infusing vodka with Butterfly Pea flowers &amp;amp; lustre dust I finally created the perfect top to my blended mango &amp;amp; peach sweet base. The next challenge was what to call it... I think it looks perfect in this gorgeous horse wine glass (a christmas gift) so the name needed to be horse related. In my free time I also run a horse rescue, and a little lady who has recently come in has certainly (like this drink) taken a little while to get just right... so I figured it would be fitting to name it after this plucky but sweet little pony "Delightful Sparkle" of course now my hairdresser thinks all Cocktail Project creations need to be dedicated to ponies... ; )

         Having always had an interest in the more abstract methods of serving a cocktail the Molecular Mixology process known as "Reverse Spherification" was something I have thoroughly enjoyed. Using Sodium Alginate (a type of seaweed extract) and Calcium Lactate (a salt derived from lactic acid) and a bit of practice getting the technique right I have been able to produce these amazing gel spheres, which pop in your mouth quite literally exploding the flavour of the capsuled cocktail! Of course they got the seal of approval by all in "The Cocktail Project" team, and even the neighbours popped round to see what all the excitement was about!
